Misty's Salted CaramelĀ Vegan Pancakes

INGREDIENTS
ā€¢ 1 cup buckwheat flour (or can use any flour)
ā€¢Ā 1 tbspĀ vanilla protein powder
ā€¢ 1 1/2 tbsp baking powder
ā€¢ 1/4 tspĀ salt
ā€¢ 1 tbsp coconut sugar
ā€¢ 1 cup almond milk
ā€¢ 1 tbsp melted coconut oil
ā€¢ 1 flax egg (1 tbsp ground flax seeds mixed in 3 tbsp water).

METHOD
Mix flour, baking powder, salt and coconut sugar together in a bowl. In a separate bowl, whisk the almond milk, coconut oil and flax egg together. Pour the wet ingredients into the dry and mix. Do not overmix! Leave batter for 5 minutes. Heat coconut oil on a pan on medium heat. Pour 1/3 cup batter onto pan and let cook for 2-3 minutes or until it begins to get golden underneath. Flip and repeat on other side. Do this for the rest of mixture.
